First step is sanding. If the previous finish didn't sink in well, you will take off most of the finish at this point. As you probably already know, start with a rough grain sandpaper first, then move to a finer grain. You will certainly lighten the stain, which, if you are switching from a dark to a medium color, might be sufficient.
If that isn't going to be enough, then you can consider using a chemical stripper. The following article is a good review on how to use these products. I have used them to remove stain on a dresser, and also remove layers of paint from door, window, and crown moulding. They have to be carefully handled to not become messy and dangerous. If done well, they are time-consuming, but do an excellent job at working out stain from down deep.

I would strongly recommend buying new doors, instead of refinishing, especially if your doors have any millwork, which makes it difficult to remove all the stain.
And, before you do this, it's probably worth getting a bid on replacing the whole thing, cabinets and all. Sometimes the time involved in replacement is worth the added expense, and the labor might be the same, replacing or refinishing. But if you're a true do-it-yourself person with no fear, it's a reasonable project to take.
