I work for a company that does cabinet refacing and though some of my answer may be biased by the way we do things, the short answer is no. You are not stuck with white.
Cabinet refacing is generally accompished by replacing your existing doors and drawer fronts with new custom made doors and drawer fronts. These can be made using either wood or RTF (Rigid ThermoFoil). The face frames of your cabinets are also resurfaced using a thin piece of the same material with a pressure sensative adhesive (PSA) on the back. Your choice of color for wood doors is nearly limitless. RTF doors have probably about 30 or so different colors varying from realistic wood grains to white and a couple of other solid colors. The doors can also be glazed to give a more decorative two-tone look.
Depending on your reason for refacing, it is also possible to just do the first step (replacing the doors and drawer) which would save you some money. Then you would be stuck with a color that goes well with the face frames of the cabinets, otherwise feel free to choose what you like.
Pricing can vary greatly depening on the size of your kitchen, style of door, labor rates in your area, and the amount of competition in your area. If you are just looking for a ballpark number, try counting the number of doors and drawers in your kitchen and multipling that number by $200. Some fancy cherry doors will run more, some basic thermofoil will run less and every company prices things a bit different. Some use linear feet of cabinetry, some use overal square footage, and some use number of openings. If the number sounds right, find a company you trust and have them come do an estimate. Most companys wont charge for this. These prices also assume that youll have a professional in to do the work. If you are a handy person, it is possible to make this a DIY project. If you are going to do it yourself, I would suggest getting a bit of extra material for the cabinet face frames. Mistakes do happen and the price for the extra material is usually better than having to wait to order more.
